No. Only the organizer and the scorers need an account. Everyone else is added as a guest by name and never touches a phone. That is the normal case for a family game.

It picks whoever has played the fewest games and waited longest, then evens out the two teams by level, then avoids putting the same two people together again. If a court still looks wrong to you, swap anyone by hand before you start the round.
That is the main thing the balancing is for. A newbie gets paired with a strong player, so the two teams come out close to equal on paper. In testing with a 1.0 and a 4.5 in the same group, most games were exactly even.
Open that person from the People tab and set Always partner with. They will never be split up and never end up against each other.
Both are fine. Check the latecomer in whenever they arrive and they join from the next round. Mark the leaver as gone and they stop being scheduled, but everything they already played still counts.
Session menu, change the number of courts. It takes effect on the next round. A court with a game on it cannot be removed until that game ends.
Undo takes back the last tap. For a bigger fix, More has plus and minus buttons for each team, or you can just type the final score. Once a game is finished, only an organizer can change it.
The score lives on the server, not on your phone, so there is only one true score. If your phone has fallen behind it asks you to refresh, rather than wiping out a point somebody else recorded.
The app keeps working and catches up when the connection returns. The screen also stays awake while you are scoring.

By default: most wins, then point difference, then points scored, then who beat whom. You can change it per session to win rate, to Americano (every point you score counts), or to your own weights.
